Champagne and Penne pasta made for a “hearty” Valentine’s Day meal. After a chilly afternoon on the cross country trails we kept it easy for our evening celebration. So a simple Pomodoro sauce was in order. Beginning with tomato sauce made from our own Yazbert Garten I added a bit of rosemary, thyme, crushed garlic, minced onions, olive oil, and a splash of vodka to the simmering sauce. Served over Penne pasta with grated parmesan and topped with fresh basil. And of course a lovely bottle of Monopole Heidsieck Brut Champagne from Reims, France made for a delicious Valentines Day!
